Talking Turkey


Since it's fall break, and I'm feeling festive, and trying to be a good wifey by feeding my husband some nutritious food that doesn't come from the Trading Post deli or a drive thru window, I fired up the crock pot for one of our favorite meals.

Crock Pot Turkey Breast

This is one of the simplest and juiciest ways to cook a turkey without having to baste the day away or touch any creepy giblets or goose-bumpy fleshy parts of a whole bird. Typically, we buy a boneless turkey breast and toss it in the pot with some salt and pepper and apple juice (to keep it nice and moist). However, in my efforts to be more frugal in the grocery shopping department, I purchased a bone-in turkey breast on sale last week. I was a little worried at first when I opened the package and saw more turkey than I wanted to see. But I put on my big girl apron and went to work seasoning the bird with salt and pepper. I gently placed my friend into a nice apple juice bath and fired up the crock pot on high for an hour, then bumped it down to low for about 5 more hours. When I lifted the lid, the meat was just falling off the bones. I was so relieved because I didn't even have to touch the strange bits and pieces, I just scooped the nice, juicy breast meat right out and dumped the left over carcass right out with the bath water. But now begs the question... or knock, knock joke as the mood strikes me.

And do we have leftovers. I always use the left overs to make yummy Creamy Turkey Corn Soup from Kraftfoods.com. I lighten it up with reduced fat cream cheese and low fat milk, and always add a little thyme to it. It's delicous and easy.
But there is a bit more turkey left over than usual. So, I may even try some Chicken/Turkey Salad thanks to a new recipe from my friend Becca. Thanks, Becca!
